有「黑色黃金」之稱的魚子醬，在印象中應該是歐洲美食，不過現在魚子醬的最大產地其實是中國。數據顯示，全球60%的魚子醬產自中國，浙江衢州和四川雅安是主要產地。

Caviar, known as "black gold," is considered a European delicacy. But actually, now, the world's largest producer of caviar is China.

Data shows that 60% of the world's caviar comes from China, with Quzhou in Zhejiang Province and Ya'an in Sichuan Province being the major production areas.

雅安擁優勢：高山雪水育鱘魚

Advantage of Ya'an: high-quality cold-water resource

四川雅安的魚子醬年產量約110噸，是全球第二大產地。這個城市以「大熊貓故鄉」聞名，地處內陸山區，為甚麼會盛產魚子醬呢？雅安的鱘魚養殖集中在天全縣和滎經縣，這裏是青藏高原向四川盆地過渡的地區。來自高山的冰雪融水，提供了優質的冷水資源，這正是鱘魚生長的關鍵。

Ya'an produces about 110 tonnes of caviar annually, becoming the second largest producer in the world.

This city is known as the "home of the giant pandas" and is located in a mountainous inland area. Why is caviar produced in large quantities here?

Sturgeon farming in Ya'an mainly concentrates in Tianquan County and Yingjing County, which are located in the transition area from the Qinghai-Xizang Plateau to the Sichuan Basin.

The glacial meltwater from the mountains provides high-quality cold-water resource, which is the key to sturgeon growth.

四川最大的魚子醬生產基地坐落在天全縣。2023年，這裏的魚子醬年產量達到60噸，遠銷美、德、法、意等30多個國家和地區。

Sichuan's largest caviar production base is located in Tianquan County. The annual production of caviar here has reached 60 tonnes in 2023 and is exported to more than 30 countries and regions, including the United States, Germany, France and Italy.

科技助力魚子醬產業

Technology boosts caviar industry

天全養殖基地科技含量十足，所有魚池都裝有探頭、智能增氧設備、智能投餌設備等裝置。養殖企業亦與研究機構合作，提升鱘魚產卵量，培育出生長速度更快、抗病性更強的鱘魚雜交品種，獲得31項中國新型技術專利，並通過歐盟EU認證和美國FDA認證。

All fish ponds in Tianquan's aquaculture base are equipped with surveillance cameras, intelligent oxygenation equipment, intelligent feeding devices, etc.

Aquaculture enterprises also collaborate with research institutions, improving sturgeon spawning capacity and cultivating hybrid sturgeon varieties with faster growth rates and stronger disease resistance.

The research results have been awarded 31 Chinese patents for new technologies and have been certified by the EU and the FDA.

魚子醬這樣的「中國新特產」帶動了天全縣經濟發展。2023年當地出口創匯1,368萬美元，惠及百姓近300戶。

The caviar industry has also benefited the local economy. Local exports of Tianquan County are reported to reach 13.68 million US dollars in 2023, benefiting nearly 300 households.
